Place the fish in a large low sided baking pan
Smear fish with olive oil.
Put the stock ingredients around the fish.
Sprinkle with salt and pepper.
Pour wine onto and around the fish.
Bake 1 hour.
Sauce:
Cup spicy brown mustard, Tablespoon sugar, Cup vinegar, Teaspoons
dry mustard, Cup oil, Tablespoon chopped fresh dill.
Place all sauce ingredients in a bowl and whisk together
until blended.
Pour the mustard sauce over the fish when you are ready
to serve.
Serve cold.
