7. Poached Salmon

15 SLICES SALMON FILLET
Est. Preparation Time: 15
Est. Cooking Time: 1 hour


Ingredients
½  Onion
8  Sliced Parsley Sprigs
1  Celery stalk thinly sliced
1  Medium Carrot thinly sliced
2  Large Shallots thinly sliced
2  Cloves Garlic crushed
2  Bay Leaves
¼  Teaspoon Thyme
2  Teaspoon kosher salt
10  Peppercorns crushed ( Teaspoon ground)
2  Cups Sauvignon Blanc
Directions

Place the fish in a large low sided baking pan
Smear fish with olive oil.
Put the stock ingredients around the fish.
Sprinkle with salt and pepper.
Pour wine onto and around the fish.
Bake 1 hour.

Sauce:
Cup spicy brown mustard, Tablespoon sugar, Cup vinegar, Teaspoons dry mustard, Cup oil, Tablespoon chopped fresh dill.

Place all sauce ingredients in a bowl and whisk together until blended.
Pour the mustard sauce over the fish when you are ready to serve.

Serve cold.
