Combine oil and onions in a saucepan. Cook until onion
is fully tender and golden stirring frequently.
Add garlic and press the garlic in the heated oil a
couple of times to release its flavor, until it barely begins
to color and remove the garlic from the pan.
Add the tomatoes. Bring to a brisk simmer, stirring frequently
for about 10 minutes.
Add the Chardonnay, salt and sugar. Adjust the heat
as the sauce begins to thicken and reduce. Cook for another 15
minutes. Adjust to taste.
* This sophisticated tomato sauce will add a homemade flavor
to the most simple pasta dish. For basic spaghetti sauce add
a few torn basil leaves or parsley to the sauce while it is simmering.
