BEAT egg.
COMBINE breadcrumbs with salt and pepper
DREDGE flounder in beaten egg and then in seasoned bread
crumbs.
COVER frying pan lightly in oil, heat oil and fry fish
lightly on both sides. When completed remove fish to a platter.
SAUTEE onion and mushroom on a low flame until it caramelizes;
approx. 5 to 7 minutes.
PLACE fish onto onion mixture in pan. Pour 1 glass wine
onto sides of pan until fish is mostly covered.
COVER, and simmer on low flame for 15 minutes.
SERVE over rice, or couscous. Drink the second glass of
wine with dinner.
